Cozy Oats & Coffee

So long as I go to bed early enough, I don’t mind waking up early.  I actually quite like the morning as long as I’m not groggy and exhausted.  It’s peaceful.  It also helps to be able to walk downstairs and instantly get cozy on the couch.

Even more so when your boyfriend brings you Starbucks.

It also helps that when you are ready, you can make a giant bowl of oatmeal with sliced almonds, peanut butter, and honey and enjoy it on the cozy couch with the hot coffee.

Nope, not a bad morning at all.

The Londoner Inspired

All day week long I have been thinking about these Epic Fish Tacos from The Londoner.  I had heard that they were a must-try from Madison, and I pretty much always trust her opinion.  And she was right.

I made a different sauce, although it was inspired from the original recipe.  I used roughly 1/4 cup Buffalo Wing sauce (probably even a little less), 1/2 pack dry ranch mix, and 1/4 cup mayo and mixed it together.  Mike loves buffalo sauce so I figured it would be a perfect time to use the unopened bottle that had been sitting in my cabinet for the past 3 months.  This amount made plenty to have some to save for later.

Doesn’t look great, but tasted pretty amazing.

Also, instead of grilling my tilapia, I baked it.  I did this by lining my glass pan with tin foil, drizzling in some olive oil, laying tilapia filets flat, drizzling a bit more olive oil and sprinkling some seat salt on top, and then baking for about 10 minutes on 425 degrees.

While that was happening, I had a glass of wine.

I got out the rest of the taco fillers…watercress, salsa, guacamole, and whole wheat wraps to serve as the soft taco shell.

Once the fish was ready, the layering began!

I folded it up and then optimistically made another.

I was able to eat one full one and then two bites of the second before giving in.  I had to resign to the fact I was stuffed, so I wrapped up the rest and either Mike or I will have it for lunch tomorrow.

This was definitely a dinner success.

Post-dinner and some digestion, both Mike and I felt like we wanted a little sweet treat so we headed downtown to grab Yopple Yogurt froyo.  I made the best froyo combo I’ve ever created.  I attribute this mostly to the fact that one of the froyo flavors was Salted Caramel Pretzel.  Seriously.  Unreal good.  I had some of that flavor, plus some vanilla and some cookies’n'cream, topped with crushed oreos, coconut, original mochi, and a drizzle of chocolate sauce.

I think it needs to be required of all frozen yogurt institutions that they serve Salted Caramel Pretzel flavor.  Just a thought.

Time to put on my compression sleeves and lay on the couch.  My legs are so achey from my run this morning.  Perhaps I could persuade Michael to give my calves a massage…
