Oscar Dinner & Very Berry Oats
Like I mentioned last night, Mike & I ordered take out from a really great restaurant from the area because he had a gift card. We got some really delicious food and sat down to watch the Oscars together. Before the food arrived I was settled in on the couch with Red Carpet coverage, Twitter, and some wine. What else do you need, really?
A little while later Mike arrived home with the food. I got the tuna tartar as an appetizer…
This was so delicious. I still have one left (they are bigger than they look) so that will probably be a nice after-work snack today.
Dinner was the horseradish encrusted salmon with green beans and mashed taters.
I really just picked at the salmon because I was kind of full from the tuna tartar and I gave Mike my mashed potatoes. I still have a big chunk of the salmon and green beans left, which means lunch tomorrow probably! I thought ahead and ordered myself a pear endive salad to take to work for lunch today. Hey it’s free! We ordred so much food and most of it is in our fridge as leftovers. Okay with me.
A morning workout today was a no-go. I tried but could not get up in time. Instead I got in the shower and then got to work as early as possible so I could leave as early as possible. Unfortunately Mike leaves tomorrow to go to Arizona for Spring Training with the San Francisco Giants and I’m trying to spend as much time with him as I can. I’ve not mentioned that he’s leaving because I was hoping that by ignoring it that maybe it wouldn’t happen. I’ve been slowly getting into a more and more sad mood the closer we get to his flight and I’m just really not looking forward to him being gone. No, really I am excited for him to go back but I will really miss being around him all the time. Being apart sucks and there is no way around it but I’m happy he’s doing what he loves.
My breakfast this morning was full of fruit. Strawberries, blueberries, and bananas in my overnight oats.
I will probably have a few cups of coffee throughout the morning as well. I stayed up late watching the Oscars and woke up really early so a caffeine kick will be much needed.

Long distance is so hard but if you can do that and live together, you’ll make it 
How long is he gone for?
Yeah it sucks but we’ve done it before so I guess it’s okay! The season is until September…so about 6 months ha. womp womp.
Mmmm that salmon looks amazing, it makes me want to try and make breaded salmon some evening this week
I love seeing what other people eat- it gives me cooking inspiration!
Sad to hear that Mike will be away- it’s always hard having to do the distance thing. But look on the bright side- for me the biggest distraction from working out is often my boyfriend.. He’s awesome and is so committed to running, but I sometimes find myself putting off runs to hang out with him. And getting up early to run NEVER happens because it’s too hard to drag myself away from morning cuddles to hit the gym! The times I’ve been most committed to running and fitness have been when I’ve been single or in a long distance relationship because your time is suddenly all yours. I know you’ll miss him very much, but there is an upside
Beside, it sounds like you’ve got lots of great things going on to keep your mind off missing him too much!
Yeah we spent basically all of a year after college apart so I know we can do it! I’ll definitely keep myself busy with running & fitness related activities for sure!! And yes, morning cuddles are quite hard to pry away from haha
Aw, well at least you’ve done distance before so it won’t be SO bad. I used to find that having “date nights” via skype really helped – we would both rent the same movie and press play at the exact same time and watch it with skype video going so we could see each other watching the movie as we watched it ‘together’. Or we’d have ‘coffee dates’ by running out and getting coffee, then having our coffee while chatting on skype video together. Sounds really nerdy when you type it out (haha!) but I found that it helped a lot with the distance! Good luck!

I love full of fruit breakfasts! I’ve been basically stockpiling blackberries, raspberries, and strawberries around here so I can add them to my bowl of Kellogg’s FiberPlus cereal in the morning, yogurts in the afternoon, and salads at dinner. I just can’t get enough I guess.

Tuna Tartare (with avocado!) is one of my all-time fave dishes!! And I really need to get on the overnight oats train. I keep meaning to do it but I never think that far ahead…
yes you should try it!! It takes all of 30 seconds actually so its way easier than cooking them on the stove
I’ve never tried raw tuna and am a little hesitant to because of a bad past experience with raw fish but everyone always raves about it… Your salmon sounds delicious!!! I didn’t tune into the award show but did have fun shopping for my own dress this weekend
